Zest up your Breakfast!

I wanted to share a delicious recipe I found on www.veganbaking.net!  I had the urge to spice up my breakfast selection this week….so I decided to bake some granola bars!  Here is the non-vegan version that calls for regular butter and jelly.  The simplicity of the ingredients allows you to have a spontaneous baking session.


1)  2 cups flour

2)  2 cups oats

3)  1 ½ cups brown sugar

4)  1 ¼ cups butter

5)  1 teaspoon baking soda

6)  ½ teaspoon salt

7)  1 ½ teaspoon cinnamon

8)  ½ cup chopped cashews

9)  ½ cup chopped dried cranberries

10) 1 ½ cups Boysenberry Jelly

Grease a 9X13 glass dish and preheat oven to 350F (177F). Beat the top seven ingredients together until crumbly (This takes about 1 minute).


Remove 2 cups of this mixture, and put it in a different bowl.


With the rest of the crumb mixture, press into the glass dish.


Bake uncovered for 10 min.


In the bowl with 2 cups of the crumb mixture, add the ½ cup chopped cashews, and mix.


In a new small bowl, stir the jelly and dried cranberries together. IMG_0355

Spread the jelly mixture onto the baked crumb mixture.


Top with the cashew mixture. IMG_0354

Bake for about 20 min., or until lightly golden on top.
