Made in a crockpot or a pan, this mock mole sauce is a wonderful midweek meal that pairs down the traditional 20+ ingredients to a single hand.
Add the chicken and enchilada sauce to a medium sized pan or a crockpot. Add the remaining ingredients and simmer until cooked through. If using a crockpot, set to low for 5+ hours.
Shred the chicken and garnish with the remaining scallions and sesame seeds.
