Made in a crockpot or a pan, this mock mole sauce is a wonderful midweek meal that pairs down the traditional 20+ ingredients to a single hand.

  • 4 chicken breasts
  • 1 can enchilada sauce
  • 2 tbsp cacao powder
  • 1 bunch chopped scallions, reserve some for garnish
  • 2 tbsp sesame seeds, plus more for garnish
  1. Add the chicken and enchilada sauce to a medium sized pan or a crockpot.  Add the remaining ingredients and simmer until cooked through.  If using a crockpot, set to low for 5+ hours.

  2. Shred the chicken and garnish with the remaining scallions and sesame seeds.
