Once you have rinsed off your chickpeas let them dry a bit with a paper towel so we can ensure they get nice and crispy! Next place chickpeas and almonds on a foil lined cookie sheet. Then add 1 tbsp olive oil and a pinch of salt n pepper. Toss and place in 400 degree F oven. Roast for about 30 minutes or until chickpeas are crisp and golden brown. You may need to toss halfway through. After roasting add maple syrup, cayenne, lemon zest, shaved coconut, and remaining olive oil and salt. Roast for 5 more minutes. Let cool and begin snacking!
