Vanilla Oatmeal with Fresh Raspberry Puree

Good Morning lovelies!

I just had to share this one with you this morning.  After catering a sweet retirement dinner this week, we had plenty raspberry puree left over from our white chocolate cheesecakes.  No since in wasting it!  So, I served it up as a bright and happy way to start the day!


Start by filling a pot with two cups of old fashioned oats, two cups of water, and two cups of milk (if you need to go a vegan or dairy-free route, almond milk is a delicious alternative that compliments vanilla and raspberries beautifully).


Heat the oatmeal over a medium flame, watching as it begins to thicken (make sure to give it a stir here and there so that it doesn’t burn to the bottom of the pan).

DSC_1517Mix in two teaspoons of vanilla extract, or if you are really after that vanilla flavor, scrape the vanilla beans from one pod.  I also threw in a dash of salt to bring out the flavor.  But, my secret ingredient for this recipe is a sneaky way of adding in some protein in a way that my 5 year old wouldn’t notice (she usually tries to pick out every nut!).

DSC_1518I added in a 1/4 cup of hemp seed hearts….these are exceptionally buttery and very healthful.  I found these at Costco, but if you can’t find these little jewels, you can always do some ground almond meal (I usually pick mine up at Trader Joe’s).

DSC_1521Cook until your oatmeal reaches a creamy consistency.  Now for the “piece de resistance”!  Fresh raspberry puree!

DSC_1522This delicious and gorgeously red sauce couldn’t be simpler to make.  Just blend up some fresh raspberries with a bit of sugar.  It makes for a sweet and bright touch for many different desserts, and (uchem) breakfasts.  This was a happy breakfast for both my tummy and my eyes!

DSC_1527 Vanilla Oatmeal with Raspberry Puree

  • 2 cups of old fashion oats
  • 2 cups of water
  • 2 cups milk (or almond milk)
  • 1/4 cup hemp seed hearts (or ground almond meal)
  • 2 tsp vanilla extract (or the seeds of half a vanilla pod)
  • dash of salt to taste
  • 1 bag frozen raspberries (or 2-3 packages of fresh)
  • 1/2 cup of sugar

serves 4

In a medium pot, add in your oats, water, milk, hemp seeds, vanilla, and salt.  Stirring occasionally.  While it is cooking and thickening, place your raspberries and sugar in a blender and process still smooth.  Set aside til you are ready to dish up and serve.  Take the oatmeal off the heat once it is creamy and thick.  Dish out and drizzle with raspberry puree (you are gonna want a lot of puree cuz it’s sooo good).
