There are most definitely some excellent options which are great in a pinch….but why not experiment with some of your own favorite ingredients for a fraction of the price? Wow! So many great options! Well, for lunch I decided that I would try my hand at a bright and fresh dressing to show off some of the beautiful spring produce that I have being buying-up left and right.
I started my little concoction with the zest of one lemon and 1/2 cup of fresh lemon juice. Then I started to layer in some more flavor with garlic, parsley, dill and basil.
Then whirl away!
Since I was using the Ninja, as opposed to my processor which has a great way to slowly drizzle in the olive oil for the purpose of emulsifying, I decided to transfer my lovely fresh mix into a bowl. This way, I could drizzle in my 3/4 cup of olive oil while I whisked away. Oh happy emulsion!
Sorry about the blurred hand…..I was busy with my emulsion, peeps! Now time for a little sweet, tart, and creamy addition.

Growing like wild here on the Central Coast, the bright flowers have a lovely peppery zing…the perfect compliment to my bright dressing, sweet tomatoes, and creamy avocados. And it couldn’t be more gorgeous!!
