Smokey Summer Corn Salsa

Summer is in full swing and man am I loving it! From the warm summer nights to flip flops all day everyday to all the yummy summer foods!! One of my favorite Summer mexican dishes is the grilled street corn with cotija cheese- drooling just thinking about it! This is my little salsa spin packed with even more flavor and crunch! I was super excited when I saw the roasted corn in the freezer section at Trader Joes and my head was buzzing with flavor combos. After some chopping and mixing I came up with this Smokey Summer Corn Salsa that will be the perfection addition to your next Summer potluck.

The main secret ingredient is Garlic Fluff. This lebanese side is a must- packed with flavor and oh so great on really anything. I suggest making a large tub and having it to so you zest up any side or entree with ease.

I am loving all the festive color in this dish, grab a bag of tortilla chips and get to dunking after you chop and mix. Feel free to add more cayenne and jalapeƱos if you want a little more of a kick as well.

Smokey Summer Corn Salsa

This colorful corn salsa is smokey and sweet, the perfect addition to an afternoon BBQ.

  • 1 bag frozen roasted corn (Trader Joes)
  • 3 tbsp garlic fluff
  • 1 avocado sliced and cubed
  • 3 tbsp feta crumbled
  • 2 tbsp chopped cilantro
  • 1/4 cup chopped purple onion
  • 1 jalapeno chopped
  • 1 tsp cayenne
  • salt and pepper to taste
  1. First make garlic fluff, never heard of it? Go here. Once you have some made you will want to add all your ingredients listed into a bowl and stir. Season with cayenne and salt and pepper to taste. Super easy! Enjoy with chips or on tacos.

  1. This salsa is the BOMB! I added some black beans and dipped some TJ’s blue corn chips into this. Holy goodness, I literally ate 1/4 of it right away. It was toooooo good!
