To welcome back Fall,what is more perfect than a batch of yummy pumpkin cookies?! But not just any pumpkin cookies… pumpkin cookies with two of my favorite things (if you guys couldn’t tell 🙂 ) oatmeal and chocolate chips! So after a quick trip back from the store, with a few pumpkins in hand, it was decided that our Fall family BBQ dessert would be these yummy little treats!
– 2 cups of flour (we used white whole wheat)
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground ginger
– 1/8 teaspoon ground nutmeg
– 1/8 teaspoon ground cloves
– 1 cup of butter
– 1 cup dark brown sugar
– 1 cup granulated sugar
– 1 cup pure pumpkin pure
– 1 egg
– 1 teaspoon vanilla extract
– 1 1/2 cup of oats
– 1/2 – 1 cup semi- sweet chocolate chips
Pre-heat oven to 350 degrees.
In one bowl, mix flour, baking soda, cinnamon, ginger, nutmeg, cloves and salt. Set aside.
Next, in a larger bowl, mix butter, brown sugar, and granulated sugar until fluffy. Then add pumpkin pure, egg and vanilla extract. After, slowly add and mix the dry mixture and mix until combined.
Then finally, stir in oats and chocolate chips and place small portions onto greased cookie sheets and place in the oven for 12-14 minutes.
Let the cookies sit for a few minutes on the cookie sheets, then enjoy or display!
These smell amazing in the oven and are perfect to back before a Fall family gathering to really get into the holiday season!
These pumpkin cookie treats sat next to our displayed pumpkin peanut brittle (pumpkin overkill maybe a little) and got to be displayed by my ever usefully chalkboard platter! These little guys went fast and tasted even more amazing paired with some vanilla bean ice cream!
