As we get ready for 4th of July festivities- what doesn’t scream America more than a classic homemade apple pie?? If you aren’t much of a “baker”- no worries! This pie is SO easy because instead of slaving away making pie dough and really making a mess in the kitchen we are going to use phyllo sheets. You can pick up phyllo dough in the freezer section of most grocery stores. By using phyllo, you also won’t be sacrificing that flaky buttery crust either- score!!
- 1 package phyllo dough
- 2.5 lbs chopped gala apples
- 3 tablespoons lemon juice and zest of one lemon
- 2 tsp cinnamon plus some for sprinkling
- ground nutmeg to taste
- 1 cup sugar plus some for sprinkling
- handful course sugar
- 1 stick Butter
- Pie Pan
- Pastry brush
Heat oven to 325 degrees F and start by melting your butter and then brushing the bottom your pie pan. Mix together the 1 cup sugar, 2 tbs cinnamon, and nutmeg in a small bowl. In another bowl, sprinkle apples with the juice and zest of 1 lemon and toss. Stir in the sugar mixture to evenly coat the apples. Next grab your first sheet of phyllo and brush with butter and then sprinkle sugar and cinnamon mixture onto butter. Place in buttered pie pan. Next repeat on another sheet of phyllo but make sure you are placing the phyllo in the opposing direction making a cross. Keep layering the sheets with butter and 10 phyllo sheets total all while creating a star patterns that overlaps so there are no gaps. Make sure while you work on each sheet your have the remaining ones covered with plastic or a wet cloth to avoid them drying out. Once your pie dough is ready add the apple mixture in and cover with remaining phyllo sheets (four sheets or so, in opposing directions). I folded the edges of the phyllo in to make a crust, then sprinkle with coarse sugar. Cover with foil so it doesn’t get too brown, bake for 1hr and then remove foil for last 20 minutes of baking. Enjoy!
