Gluten Free Coconut Pancakes with Peaches & Almonds

Oh dear, this one is dedicated to all my comrades who get a belly ache at the mere sight of baked goods!  Hang in there lovelies, you can still get your massive cravings sated, and look like a domestic goddess in the meantime.  The best part about this delicious decadence is that you literally take a boxed mix and give it some quick panache.  Seriously, this is fast and easy…perfect for a lazy morning OR a busy day…which my kids totally appreciate!

1 cup Bisquick Gluten Free Pancake Mix

1 cup of milk (or coconut milk 🙂 I loooove my coconut!)

2 tbsp coconut oil

1 egg

3/4 cup sweetened, shredded coconut

2 peaches, sliced

1/2 cup almonds, chopped

powdered sugar for dusting

serves 4 (or two piggies 🙂 )

peaches, almonds, shredded coconut, and gluten free bisquick for pancakesAfter you have mixed your ingredients, go ahead and cook your pancakes on a skillet.  You can use butter or canola oil, but I love the flavor of cooking them with coconut oil.  It literally becomes this magical layered flavor of the tropics!

Serve with fresh peaches, chopped almonds and a fairy dusting of powdered sugar.  Then….dig in and sate those cravings!!!

A fast, easy, DELICIOUS pancake recipe for those gluten-free folks. Even my kiddos love them!!

Servings: 4
  • 1 cup Bisquick Gluten Free Pancake Mix
  • 1 cup milk or coconut milk
  • 1 egg
  • 3/4 cup sweetened shredded coconut
  • 2 tbsp coconut oil for cooking pancakes
  • 2 peaches, sliced
  • 1/2 cup chopped almonds
  • powdered sugar for dusting
  1. Whisk pancake mix, milk, egg, and shredded coconut together in mixing bowl.

  2. Heat coconut oil on skillet. Portion out batter on heated skillet and cook pancakes.

  3. Top with fresh peaches, chopped almonds, and powdered sugar.
