Guys I am so in love with these yummy pancakes I think I ate them 4 days in a row!! My momma made these for me during one of my visits down south and I quickly snagged the recipe to make them at home. I love that they are almost like apple fritters- no not the donut! hahah But little apple haystacks? Crunchy but yet sweet and healthy in the right ways! Plus the fact that I used to work at an apple stand and got married in an apple orchard doesn’t help my love for apples 🙂 I hope you enjoy this yummy breakfast treat!
Start by grating three apples and then adding all the ingredients listed in the recipe card below- smells so fresh and yummy!! You can make this recipe gluten free by substituting regular flour for gluten free flour!
Once all your ingredients are combined it’s time to fry up in that coconut oil!
Top with syrup, agave or just eat as is- you are sure to be addicted like me!! 🙂

These apple pancake are a great source of protein and a super yummy alternative to a healthy breakfast!
- 3 large eggs
- 2 cups shredded apples (about 3 apples)
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
- 1/8 tsp honey or stevia
- dash of salt
- 1 tbsp coconut oil
- 1 tbsp flour (substitute with almond flour for gluten free)
Grate apples and pat dry with paper towel to absorb moisture. Set aside. In large bowl whisk eggs, salt, vanilla, baking soda, stevia or honey. Stir in flour and add apples. Heat coconut oil in skillet and scoop 1/4 cup into oil. Fry til both sides turn brown.
