Chanda and I were craving something light, fresh and chilled to make another attempt to beat the heat today!! What I love about this antipasta salad is that it’s so colorful and also gluten free for some of you peeps!!It’s super easy to make and whip out for guests and get the “hostess award” so be sure to file this one away!!
Grab your ingredients below 🙂
Slice up your coppa…
Now time to half your cherry tomatoes…
And chop up those cucumbers….
And lastly the purple onion into bite sized pieces…
Toss EVERYTHING together in a bowl….
Add a splash of the marinated juices from the artichoke hearts and add the mozzarella
Time to toss together!!

Antipasta salad is a go to for any potluck or dinner with friends! We love the Italian inspired flavor of this salad!
- 1 container marinated mozzarella balls
- 1 jar marinated artichoke hearts
- cherry tomatoes, sliced
- cucumbers, diced
- Coppa, sliced
- purple onion, sliced
Start by slicing up your coppa. Then cut your cherry tomatoes in half. Add then to a large bowl for tossing.
Then dice your cucumbers and purple onions into bite sized pieces. Add to the large bowl for tossing. Add the mozzarella balls and artichoke hearts to the large bowl.
Add a splash of marinated juices from the artichoke hearts and mozzarella jars. Now toss the salad together and transfer to a serving dish.
